Concept of this cuvée
We have endeavoured to obtain a great harmony between fruit and body in this wine. It can therefore be enjoyed as soon as it is on the shelves, but can also be cellared for 4 to 5 years. The concentration of this wine makes it not only an ideal partner to red meats, but it can also be matched with a much larger array of dishes, due to its intense fruit and supple tannins. The focus on quality seems to have already born its fruit, as the first 2010 vintage has already won many awards and great reviews throughout the world.
Before the alcoholic fermentation in stainless steel tanks, a prefermentary cold maceration of 5 days was carried out in order to develop persistent primary aromas of red fruits and fresh dark berries
A long maceration of 4 weeks, in order to slowly extract the finest tannins: this process will develop the subtlety of the wine and the silkiness of its tannins
Then, instead of remontage, the more demanding process of délestage was carried out. This technique is renowned for the quality of its tannins extraction
Malolactic fermentation was then carried out in 225-liter French oak barrels exclusively
