Concept of this cuvée
What is targeted in this cuvée is the alliance of intense fruit and opulence of the Malbec. The final product is a very fragrant and intense, powerful rosé, with flower notes such as rose petals, and fresh red berries aromas.
As a result, this very versatile rosé will accompany a large array of dishes, beside its more traditional pairings (cured meats, cheeses, salads, or simply by itself).
A 6-hour pre-fermentary cold maceration was carried out before the bleeding process (saignée), after which a first cold settling was done (débourbage à froid).
Alcoholic fermentation was done at a low temperature, without any malolactic fermentation, in order to secure an optimal development of fruity aromas.
The rest of the wine aging is done on fine lees in stainless steel, with a frequent stirring (bâtonnage) during 2 extra months.
At the end of the aging process, the wine is entirely settled and cold-stabilised for 4 weeks.
